Ingredients for 2 people:
100g Barley
100g SauerBeet
Seasonal Vegetables (as much as you want!)
2 tbsp Irish Rapeseed Oil
50g toasted Nuts
1 tbsp Harissa Paste
1 tbsp chopped Parsley
1 tbsp chopped Mint
Instructions:
Cook Barley as indicated on the pack. Set Aside to cool down.
Mix rapeseed oil and harissa paste until smooth. Coat your favourite seasonal vegetables with the harissa marinade and roast them. When ready, set aside to cool down.
Transfer cooked barley to a large mixing bowl. Add roasted veggies with their marinade, SauerBeet and fresh parsley and mint.
Top with toasted nuts.
Serve!
